Method
- In a bowl or zip-top bag, combine the orange juice, lime juice, cilantro, olive oil, minced garlic, chili powder, cumin, salt, and pepper.
- Whisk or shake until well blended.
- Add your steak (carne asada) or chicken (pollo asado), turning to coat completely.
- Marinate in the refrigerator for at least 1 hour, or up to overnight for deeper flavor, then grill as desired.
Tips & Notes
- Marinate overnight for the most flavorful, tender results, but no longer than 24 hours so the citrus doesn't break down the meat.
- Works equally well on flank or skirt steak for carne asada and on chicken thighs for pollo asado.
