Carne Asada / Pollo Asado Marinade

A bright citrus marinade for carne asada or pollo asado, balancing orange and lime juice with garlic, cumin, and chili powder. It's quick to whisk together and infuses steak or chicken with bold, smoky-citrus flavor before grilling.

Ingredients

  • Juice from 1 orange
  • Juice from 1 lime
  • 2 tbsp cilantro
  • 2 tbsp olive oil
  • 3 cloves minced garlic
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp salt
  • 1/4 tsp pepper

Method

  1. In a bowl or zip-top bag, combine the orange juice, lime juice, cilantro, olive oil, minced garlic, chili powder, cumin, salt, and pepper.
  2. Whisk or shake until well blended.
  3. Add your steak (carne asada) or chicken (pollo asado), turning to coat completely.
  4. Marinate in the refrigerator for at least 1 hour, or up to overnight for deeper flavor, then grill as desired.

Tips & Notes

  • Marinate overnight for the most flavorful, tender results, but no longer than 24 hours so the citrus doesn't break down the meat.
  • Works equally well on flank or skirt steak for carne asada and on chicken thighs for pollo asado.
  • Reserve a little of the marinade before adding raw meat if you'd like a fresh drizzle to finish the grilled meat.
