Banana Pancakes

Scratch made pancakes so easy you’ll never need to buy the box mix.

Ingredients
- 2 cups (240g) AP Flour
- 1/4 cup (50g) granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon kosher salt
- 2 large eggs
- 1 1/4 cup whole milk
- 4 Tablespoons (50g) melted butter
- 1 ripe banana
Directions
- Combine flour, salt, baking powder, and sugar into a medium size mixing bowl
- In a separate large bowl beat the eggs and combine with the milk and melted butter
- Slowly mix the dry into the wet batter until no remaining lumps. Becareful not to over mix.
- While the batter rests, heat up your skillet or griddle to medium heat and slice your banana (or other fruit).
- When the pan is hot, add a knob of butter to grease the pan, then use a 1/4 cup measuring cup to scoop and drop batter in the middle of the pan
- Add your banana slices to the pancake and wait a few minutes until the pancakes is nice and bubly.
- Flip the pancake and cook for about a miniute on the second side.
- Repeat with remaining batter
