Banana Pancakes

Scratch made pancakes so easy you’ll never need to buy the box mix.

Ingredients

  • 2 cups (240g) AP Flour
  • 1/4 cup (50g) granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 2 large eggs
  • 1 1/4 cup whole milk
  • 4 Tablespoons (50g) melted butter
  • 1 ripe banana

Directions

  1. Combine flour, salt, baking powder, and sugar into a medium size mixing bowl
  2. In a separate large bowl beat the eggs and combine with the milk and melted butter
  3. Slowly mix the dry into the wet batter until no remaining lumps. Becareful not to over mix.
  4. While the batter rests, heat up your skillet or griddle to medium heat and slice your banana (or other fruit).
  5. When the pan is hot, add a knob of butter to grease the pan, then use a 1/4 cup measuring cup to scoop and drop batter in the middle of the pan
  6. Add your banana slices to the pancake and wait a few minutes until the pancakes is nice and bubly.
  7. Flip the pancake and cook for about a miniute on the second side.
  8. Repeat with remaining batter
